This is a really simple, delicious and nutritious recipe for these cooler mornings. It can be easily adapted to use any fruit you have lying around in your fruit bowl. It is virtually gluten free with oats as many oat brands contain no gluten.
Ingredients
1 | Apple, roughly chopped |
4 | Feijoas, roughly chopped |
½ cup | Blueberries, fresh or frozen |
1 cup | Rolled oats |
½ cup | Desiccated coconut, or shredded |
1 tsp | Pumpkin seeds, or sunflower/chia/linseeds |
½ tsp | Cinnamon |
Directions
- Preheat oven at 180 degrees Celsius.
- Roughly chop the apple and feijoas and spread around the base of 1 medium or 2 small individual bowls, along with the blueberries. Sprinkle the cinnamon over the fruit.
- In a seperate bowl mix together the dry ingrediants - rolled oats, coconut, seeds. Evenly spread this over the 1 or 2 portions. Cover with tin foil and bake for around 20 minutes. If you prefer your oats a little golden bake without the foil for the final 5 mins.
- Once baked and the apple feels soft, leave to cool for a few minutes before adding your choice of milk overtop. Leave the milk to absord for a few minutes and this will also make the oats softer and easier to digest. Drizzle with maple or yogurt if you prefer a sweeter or more tart taste.
