Aubergine, mozzarella and tomato is a winning combination. I like to drizzle with a good quality balsamic to finish. Make plenty of these, as they will be popular.
Ingredients
| 2 Tbsp | Olive oil |
| 12 cubes | Aubergines (Main) |
| 6 | Cherry tomatoes (Main) |
| 12 cubes | Avocados |
| 12 | Basil leaves, or use baby spinach leaves |
| 12 pieces | Mozzarella cheese (Main) |
Directions
- Heat the oil in a pan to a medium heat. Add the aubergine pieces and cook for 4 minutes each side or until just cooked through. Cool.
- Onto a skewer place a piece of tomato, avocado, spinach leaf, mozzarella and aubergine. Continue until you have 12.
- Place onto a platter, season and drizzle with balsamic.
