Enjoy a new way of serving calamari in this crunchy, fresh salad that is a meal in itself.
|2 bunches||Asparagus (Main)|
|300 g||Calamari rings (Main)|
|2 Tbsp||Sesame seeds|
|1 Tbsp||Sesame seeds|
|1 pinch||Cayenne pepper|
|1 to taste||Salt & freshly ground pepper|
- Cook asparagus in plenty of boiling, salted water for 2 minutes or until just tender to the bite. Drain and plunge into ice cold water to cool completely. Drain well and set aside.
- Heat a little oil in a frying pan. Brown calamari rings in batches for 1 minute on each side then remove to cool.
- Combine asparagus , calamari and remaining salad ingredients, except sesame seeds, in a large bowl. Combine dressing ingredients in a small bowl and season with salt and pepper to taste.
- Pour dressing over salad ingredients and toss well to combine. Scatter with sesame seeds and serve.
