This recipe was submitted by Teresa Brannigan as an entry into our special occasion dessert reader recipe competition.
Ingredients
| 1 ½ cups | Flour, or ground almonds, or 1¼ cup of coconut flour |
| ¾ cup | Caster sugar |
| 125 g | Softened butter |
| 1 tsp | Vanilla essence |
| 2 | Eggs |
| ½ cup | Milk |
| 1 | Apple, thinly sliced (Main) |
| ¾ cup | Blueberries (Main) |
Directions
- Beat all ingredients until smooth
- Pour into 22 cm tin and on top put the thinly sliced apple and ¾ C blueberries.
- Serve with mascarpone
- Bake 45 mins at 160C
