These 4 Ta'ahine Kumara , pumpkin & Carrot Salads are very special because I grew these Kumara 3 different varieties which is Tongan, Hawaiian & Maori Kumara when my husband was away in China last Year teaching at Rewi Alley Centre. We have 4 Ta'ahine ( daughters ) And that's where I got the name of my salads from
Ingredients
2 large | Kumara (Main) |
1 bunch | Flat leaf (Italian) parsley |
6 small | Cherry tomatoes |
Directions
- Pre heat the oven to 180 deg. Rub the outside of Kumaras with 20g of butter. Bake them 20 - 25 mins but check them with pointed sharp knife to make sure they are cooked ( do not over cooked them ) slice them into squares. Pour 6 tbs of 100% virgin oil. Add 1 lime. Throw Italian parsley over it. Add salt & Pepper
