The Bite community have submitted many delicious spring recipes that now sit proudly on bite.co.nz. We enjoyed plenty of asparagus, scallops and spring lamb, but these three stood out for giving us a taste of something different and because they truly did put a spring in our tastebuds. Checkout our winners below or see all of the entries in our spring reader recipe competition in our collection.
Winning recipe: Spring snapper and broadbean sandwiches
The Bite judges say: We loved the simplicity of James Siddle's sandwich/burger – who doesn't want to eat a freshly-caught, fried snapper sarnie! And the broad bean puree looks and tastes great.Get the recipe
The Bite judges say: The miso baked eggplant and cumin really elevate this dish. Samantha Dekker's recipe also makes a great accompaniment to spring lamb too (but we won't tell our vegan friends that).Get the recipe
Third place recipe: Puffed rice salad
The Bite judges say: Ritu Kapoor has added an exciting new salad to our repertoire. Its tangy, spicy flavours bring the tastebuds alive and it's a delicious way to utilise sweet, little waxy new potatoes. Puffed rice is available from speciality food stores and Indian grocers, you will find chat masala here too. We have adapted Ritu's recipe slightly. Get the recipe
