Managing weight or health issues like diabetes while satisfying food cravings can be tricky - especially if you like the odd sweet treat.
For the sweet-toothed and kilojoule conscious, Equal has introduced Equal Baking - a new, low-kilojoule alternative to sugar created specifically with baking in mind.
Equal Baking has been formulated
for results at high temperatures. It can be used to replace sugar in baking and cooking.
Swapping sugar for such substitutes in cooking and baking recipes can help lower the kilojoule intake as it contains up to 89 per cent less kilojoules than sugar.
As part of the launch for the product, Equal has developed a number of recipes especially for Equal Baking, such as banana, pineapple and walnut cake or orange and pistachio shortbread biscuits.
Equal Baking can also be sprinkled over fruits and cereals, or used to sweeten hot and cold drinks for a low-kilojoule alternative to sugar.
Equal Baking is recommended for retail at $10.99 for a125g box and is available at most supermarkets.
Cooking spray
2 large ripe bananas
130g (1/2 cup) low-fat vanilla yoghurt
60ml (1/4 cup) skim milk
40g 40 per cent reduced-fat spread, melted, cooled
2 x 50g eggs
1 tsp vanilla essence
1/4 tsp coconut essence
160g (1 cup) wholemeal self-raising flour
40g (1/4 cup) self-raising flour
2/3 cup Equal Baking
2 Tbsps shredded coconut
Preheat oven to 160 C (fan-forced). Spray a 5cm deep, 9 x 19cm loaf pan (base measurement) with the cooking spray. Line the base with baking paper, allowing the paper to overhang the sides.
Put the bananas in a medium bowl and use a fork to mash until almost smooth. Add the yoghurt, milk, spread, eggs, vanilla essence and coconut essence. Whisk until well combined.
Add the flours and Equal to the banana mixture. Stir until well combined. Pour into the lined pan and smooth the surface with the back of a spoon. Sprinkle over the coconut. Bake for 45-50 minutes or until a skewer inserted into the centre of the cake comes out clean, covering the cake after 30 minutes, if necessary to prevent overbrowning.
Set aside in the pan for 10 minutes before turning out onto a wire rack to cool completely.
Slice and serve.
