In a town with plenty of fast food outlets to choose from, the opportunities can sometimes be slim pickings for those looking for healthier options.

Enter Sam Harrison - an entrepreneurial wrap maker who is taking his fresh and healthy food creations to the masses from his Theo's Wraps stall at Kuirau Park market every Saturday morning.

Theo's Wraps (named after Sam's 18-month-old nephew) has been humming along at the market since opening last month.

Sam, a former Aucklander, with Maori and Welsh heritage, is a relative newcomer to the food industry but lack of experience does not deter him.

After working in the adventure tourism industry as a rafting guide he understands the importance of eating fresh food to stay healthy.

"I just saw that there were not many options for people to eat healthy take away food which was affordable and filling, instead of making them cloggy inside," Sam says.

Sam says he enjoys the other food stalls at the market but he wanted to try offering something different.

"I like to eat and also lead a healthy life, I run eight kilometres each day and need to eat well to keep my energy levels up."

He got a food hygiene certificate, bought a pergola and gas hob, and taught himself to make wraps from wholemeal flour with an original meat sauce recipe - "with eight secret spices" - to add flavour.

After adding cottage cheese and sour cream, fresh grated carrot, red onion, capsicum, tomatoes and shredded lettuce, it's a wrap and ready to eat.

The wraps come in two sizes - The Jogger ($3), and The Sprinter ($6) - depending on hunger levels.

"We cook everything in front of the customer and they can choose the portion size
"All the boxes are ticked - protein, five vegetables a day, no saturated fats, and heaps of energy."

Sam says he is looking forward to the summer when the weather settles and people get more conscious about what they eat.

He also wants to take his food stall to other markets close by when business improves.

"I'm hoping the wraps will attract people who are like-minded and enjoy healthy food. I've learnt in the short time I have had the stall that customers know what they want.

"There is a real shift to living longer and eating better.

"Coming from a Maori background I know how easy it is to slip into bad habits. I hope I can help provide a healthier eating habit to turn to.

"There's a good vibe at markets, people are there as an option to supermarkets but there's heaps of ways to expand and offer other healthy food and drink options."
