"Each time we sit down after the last festival and come up with ideas about what we could do better the next time."
She said this year they concentrated on serving the most traditional food and beer they could find - so they went all the way to Germany.
Even the beer is fully authentic coming from the 700-year-old Aktienbrauerei in Kaufbeuren, Germany, so festival goers can enjoy a traditional wheat beer, pilsner, radler or dark wheat beer while singing along to the band.
There's also local Croucher beer and Tohu wines available.
Mrs Uhl said there would be entertainment each night with top local performers and an authentic 30-piece oompah band called Guggemusik playing tomorrow and Saturday nights.
"It's amazing how many Germans there are here and all the costumes come out for our best dressed couple competition," she said.
Saturday night is traditionally the big night for the beerfest and this year there will be a special live performance by local band Swamp Thing (Michael Barker and Grant Haua) who are releasing their first album on the night.
On the Sunday - to mark the end of the Rugby World Cup - they will be holding a Feast of Nations with traditional schweinshaxe - roast pork and potato salad.
They have also put on a bus service to and from the event, leaving from outside the Library Store on Haupapa St at 6pm each day and also at 1pm on Saturday. Buses head back into town about 10pm each night.
Tonight: Free entry. Music by Jamie and Craig from 6pm.
Friday: $10 entry. Music by The Fisher Kings and 30-piece carnival band Guggemusik from 6pm to 10pm.
Saturday: $20 entry (includes stein). Music by Sam and Jamie, carnival band Guggemusik and a new album release by Swamp Thing. From 1pm to 10pm.
Sunday: Free entry. Music by Poppy Dust. From 11am with a Feast of Nations from 5pm ($20).
