The succulent flat iron steak is the latest addition to the Silver Fern Farms premium aged beef range. To some it's the butlers' steak, to others the oyster blade. Whatever the name, this unique cut of meat has been a delicious secret for far too long.

FLAT IRON PAN-FRIED STEAK with MIDDLE EASTERN RUB

INGREDIENTS

1 Packet Silver Fern Farms flat iron steaks
1/2 tsp caraway seeds
1/2 tsp cardamom seeds
1/2 tsp black peppercorns
1 whole clove
1/2 tsp turmeric
1/2 tsp salt
2 Tbsp extra virgin olive oil

Feta and Tomato Bake:
200g feta cheese
Zest and juice of a lemon
1/4 tsp chili flakes
2 stalks of fresh marjoram or oregano
300g small vine tomatoes
2 Tbsp extra virgin olive oil

METHOD

Preheat oven to 200C. Break the feta up into 10 large pieces and place in the bottom of a baking dish. Sprinkle over zest and juice and chilli flakes.

Sit marjoram and tomatoes (still on the vine) on top and drizzle over oil.

Bake for 15 minutes until tomatoes are starting to split.

Grind the spices together in a mortar and pestle or spice grinder.

Rub the spice mix over the steaks and coat with olive oil.

Preheat a frying pan or barbecue and cook the steaks for 3 minutes each side.
