The Gifford with Spiced Silver Rum

Summer is here already in the Bay and what better way to celebrate than with cocktails by the pool or on the deck. Waiwera Spirits, one of the exhibitors in the Bay of Plenty Times Down to Earth Expo, has got it covered with these delicious recipes.

A team of professional Russian distillers, the company has an all-natural ethos. This approach starts at the very beginning, with raw ingredients that are used to make products. The whole process happens at its own distillery from fermentation to bottling.

The Gifford with Spiced Silver Rum 60ml Waiwera Spiced Silver Rum
15ml Meyer lemon juice
20ml Manuka honey syrup (1 part honey to 1 part cold water mixed together)
Combine all ingredients in a cocktail shaker, shake with ice and strain into a chilled coupe. Garnish with a sprig of mint or with a citrus flower.

15ml lime juice

30ml lemongrass syrup (100g lemongrass, 250g white sugar, 500ml water - blend together until lemongrass turns into a pulp, rest overnight and strain the pulp off)

1 drop of Kaitaia Fire

Build ingredients in a tall glass over ice, top with a touch of sparkling water. Garnish with a lemongrass stick and kaffir lime leaves.

Spiced Summer Punch with Spiced Gold Rum 45ml Spiced Gold Rum

15ml Meyer lemon

20ml Shott Spiced Berry syrup

A dash of Angostura bitters

Combine all ingredients in a short glass over ice, add fresh berries in season. Garnish with spices, citrus and fruit.
