Brew bar manager Mel Rolfe said it was not worth the expense to open for breakfast during the week.
"We decided to add an extra offering after listening to feedback about not being open," she said.
"We'll see how it goes and if it doesn't work for us, we will let it go.
"We have had to hire four extra staff to cover those shifts."
Mac's Food and Wine co-owner Bob Macfarlane said opening early on the weekends had proven to be a good idea.
"It really was a suck it and see sort of thing. We are feeling our way to a certain extent to see what we can do to get extra business. We also changed our name to reflect that.
"The extended hours over the weekend have been good for us."
Jazzed Bar and Eatery restaurant manager Erin Cameron said they were still discussing whether to open for breakfast.
"It is something we would like to do in the near future, but we still need to get used to the new place and get everyone up to speed," she said.
Cafe Ephesus owner Niyazi Gunaydin said he would also consider opening for breakfast, but not this season, saying he would look at it for next summer.
