In a nutshell, what does your business do?

Mistress of Cakes is all about good food. We take great pride in creating delicious, delectable food.

What inspired you to set up the business?

My inspiration for Mistress of Cakes came from my days of living in London. My favourite haunt was Borough Market and in particular the Flower Pot Bakery Stall, which sold the most amazing brownies. I decided that when I came back to New Zealand I was going to set up a market stall selling delicious baking.

What was the best business decision you have made?

Taking on the lease for my original kitchen in Lynmore which allowed me to move on from Lynmore Primary and really focus on growing a business.

What was your worst business mistake (if any) and what did you learn from it?

I see every thing that happens in business as an opportunity for learning. I can't say that there have been any huge mistakes - only situations in which to learn what not to do.

What do you see as the biggest opportunity for your business in the year ahead?

With taking on my new bigger kitchen in Lynmore, I now have the space to increase my capacity and range of product. The new kitchen gives me the opportunity to expand.

If you could do any other job for a day, what would that be?

I don't want to do anything else. I am right where I want to be, doing what I love. Not everyone gets to follow their dream and I feel truly lucky that I am able to follow mine.

How do you maintain a healthy work/life balance?

I am really not the one to ask about maintaining a healthy work life balance. I am trying to create a better balance - some days it works, some days it doesn't.

What's the best thing about being in business in Rotorua?

The best thing about being in business here in Rotorua is that I have come the full circle. My last year of high school was at Lakes High. I did my cooking apprenticeship at the Landing Cafe and I am now building a business here. The support from the community has been amazing. From my very early days at the market to now I still have the same customers. That's the best thing about being in business in Rotorua.

If you were mayor of Rotorua for one day, what one change would you make?

I would sort out the CBD parking ... make it more user-friendly, along Taupo lines.
