Yellow boiled fruit cake.

A fruit cake was requested so Nan whipped this one up and managed to take a picture before Papa started eating it. “He took half to work. Hopefully he was going to share it.”

INGREDIENTS

450g sultanas

1 T golden syrup or maple syrup

250g butter.

3 eggs

1 cup sugar

1tsp vanilla essence (or juice of half a lemon and some lemon zest)

2 cups sifted self-raising flour

1/4 tsp salt

1/2 cup walnuts (optional)

METHOD

Place sultanas in a saucepan and cover

with 1 cup of water.

Bring to the boil adding golden syrup

(or maple syrup) and butter.

Simmer lightly until melted. Cool.

In a bowl, beat the eggs, sugar and

vanilla essence together.

Add sifted flour and salt.

Add cooled sultana mix and walnuts if using.

Pour into greased cake tin.

Cook for one hour at about

150 deg C (Nan uses fanbake) or until knife inserted comes out clean.

Leave to cool, if you can bear waiting.
