Perfect for a quick mid-week dinner or as lunch the next day.
Ingredients:
1 large onion, diced
1 tbsp each: olive oil, grated root ginger

1 tsp each: mixed spice, ground turmeric
400g can diced tomatoes
1 green pepper (capsicum), seeded and cubed
3 cloves garlic, crushed

400g skinned and boned chicken, diced
Finely grated rind and juice 1 orange
Method:
In a large frying pan, saute onion in oil, until softened.
Add ginger and spices and saute for 30 seconds.
Add other ingredients.
Cover and simmer for about 10 minutes or until chicken is cooked.
Delicious served on couscous. -Serves 4.
