This quick and easy dinner is perfect for during the week and, great with mashed potatoes and salad.

Ingredients:
2 large chicken breasts, skinned and boned

2 tbsp flour

salt and pepper

1 tbsp olive oil

1/2 cup chicken stock

2 large cloves garlic, crushed

1 tbsp lemon juice

1 tsp butter

Method:

Halve each chicken breast lengthways. Flatten slightly. Dust with flour and seasoning. Heat oil in a non-stick pan. Pan-fry chicken for about 5 minutes each side. Remove and keep warm.

Add stock, garlic, lemon juice and butter to the pan. Bring to boil and pour over chicken. -Serves 4
