IS THE WATER LEFT OVER FROM BOILING POTATOES SUITABLE FOR MAKING GRAVY?
Yes, but remember that it has already been salted. Potato water is also good for making bread, giving the yeast additional leavening power as well as adding a moist texture to the finished product. Try replacing some (or
all) of the liquid called for in your recipe, adjusting the amount of salt as necessary. Potato water can also be used in some soups and sauces. Refrigerate if not needed immediately, and use within 24 hours.
DO YOU HAVE A RECIPE FOR MAKING A SMALL QUANTITY OF FEIJOA RELISH?
Dice 500g peeled feijoas, place in a pan with 1 cup malt vinegar, 1 peeled and grated apple, and 1 diced onion. Bring to the boil, cover and cook for 25 minutes, then add 1 cup brown sugar, 1 teaspoon each salt and ground ginger, and a pinch of cayenne pepper. Stir to dissolve the sugar then cook uncovered for a further 15 minutes or until thick, stirring frequently. Pot and cover with preserving-type seals.
