WHY DO RECIPES FOR RYE BREAD USE WHITE FLOUR AS WELL?
Rye is quite low in gluten, so using it alone makes a flat and heavy loaf. On the plus side, breads made with all rye flour are high in fibre and often keep for longer. If you increase the
proportion of rye flour in a recipe be prepared to add extra liquid.
HOW LONG CAN I KEEP AN OPENED TUBE OF TOMATO PASTE IN THE FRIDGE?
It should be okay for two or three months unless wording on the tube says otherwise. If in doubt, squeeze it on to a tray lined with plastic wrap and freeze until firm before transferring to a suitable freezer container. Canned tomato paste needs to be removed from its tin once opened then refrigerated in a covered glass or plastic container for use within a week or so. Freeze for longer storage.
