Supply and demand. Portuguese sardines canned with olive oil are appreciated for their flavour, which is fairly mild compared with cheaper cans. But fresh fish stocks are dwindling, and processing costs are
increasing. The best thing to do is to try various kinds and decide for yourself - canned sardines on toast make a quick and healthy meal, and even the more expensive cans are still relatively cheap.
CAN YOU SUGGEST A QUICK AND TASTY WAY OF SERVING PUMPKIN OTHER THAN MASHED?
Coarsely grate 300g peeled pumpkin (about three cups) and toss together with 1 teaspoon chopped fresh thyme, a shake of salt and a good grinding of black pepper. Heat 1 tablespoon light-flavoured olive oil in a heavy non-stick pan and add the pumpkin mixture, cover the pan with a lid and cook over a moderate heat for about 15 minutes, turning occasionally. This makes about three servings; increased quantities may need extra cooking time.
