CAN I MAKE WALNUT BREAD BY SIMPLY ADDING CHOPPED WALNUTS TO A BASIC DOUGH?
Yes. Add the nuts after the first rising of the dough and knead them in until well mixed. Toasting the walnuts first improves their flavour. You can do this in the microwave for a couple
of minutes, stirring halfway through; in a heavy-based frypan for two or three minutes, stirring constantly; or in a moderate oven for five to 10 minutes. Walnuts burn easily so watch them carefully. Chop nuts after toasting, not before.
HOW DO I MAKE POTATO FRITTERS USING SINGLE SLICES OF POTATO?
Put 1/2 cup self-raising flour plus a shake of salt and pepper in a bowl, add one egg (optional) then beat in enough milk or water to make a smooth batter. Peel one or two large potatoes and slice thinly. Pat dry, dust with extra flour then dip in batter and fry over a medium heat until golden on each side. Drain on kitchen paper and serve hot. These are sometimes known as potato scallops.
