HOW DO I KNOW IF MY POTS AND PANS WILL WORK ON AN INDUCTION COOKTOP?
Test with a fridge magnet; if it sticks to the outside base of your pot, that pot should be induction compatible. Pots made of
aluminium, copper, glass, ceramics and other non-magnetic materials will not heat up on induction cooktops unless you have an induction diffuser or induction adapter. These metal gadgets enable you to use a non-magnetic pot on the induction cooktop, though they are not terribly efficient.
IS CREAM CHEESE A SUITABLE SUBSTITUTE FOR MASCARPONE IN RECIPES?
Sometimes. But regular cream cheese has a lower fat content and more acidic taste than mascarpone so the flavour and texture of your dish might be slightly different. To use cream cheese instead of mascarpone, take it out of the fridge ahead of time so it reaches room temperature, then beat with a fork to soften it - this will give the cream cheese a similar consistency to mascarpone and make it easier to blend with other ingredients.
