In a large heavy based saucepan put 500g peeled and diced kiwifruit, 1 peeled and diced cooking apple, 1 cup chopped onion, 1 cup white wine vinegar, 3/4 cup whitesugar, 1/2 cup sultanas, 2 tablespoons finely-chopped crystallised ginger, 1 teaspoon salt, 1/2 teaspoon ground ginger and 1/4 teaspoon cayenne pepper. Bring to the boil, stirring to dissolve sugar, then cook for about 40 minutes or until thick, stirring occasionally. Turn into hot sterilised jars and seal. Makes 2 medium jars.

Put some baking soda in the container and mix to a thick paste with water. Smear this all over the lid and container then leave for a day or two before washing and drying - don't put the lid on tightly when storing. In future, use a glass container rather than plastic. Or try a kitchenware store for a dedicated onion storage container, noting that cut onions don't keep for more than a few days.
