Assemble 125g good-quality dark chocolate, 2 tablespoons caster sugar, 1 large egg, 1/2 teaspoon rose essence (or vanilla essence), and 125ml coconut cream (not low-fat).
Put the chocolate in a medium-sized bowl and melt by microwaving on medium-high for one to two minutes,or by standing over simmering water. Stir well and whisk in the sugar, then the egg, essence and coconut cream. When smooth and combined pour into four small ramekins or cups and chill for an hour or longer.

Wash, quarter then finely slice 500g limes. Put in a heavy-based pan with any juice, adding 50g peeled and shredded fresh ginger plus 5 cups water. Bring to the boil, cover and simmer one to two hours or until peel is very soft.
Stir in 4 cups sugar and bring back to the boil. Cook uncovered over a brisk heat until a good setting test is given. Stand 10 minutes (so peel doesn't rise) then stir and pot.
