Can you suggest a biscuit recipe featuring dried cranberries?
Cranberry cookies: Beat 125g softened butter with 4 tablespoons sugar, 2 tablespoons sweetened condensed milk and 1/2 teaspoon vanilla essence until light and fluffy. Sift in 1 1/4 cups flour and 1 teaspoon baking powder then add 3/4 cup sweetened dried cranberries, clumps separated. Mix well, then press into heaped teaspoon lots and arrange on a lined oven tray. Flatten slightly and bake for about 12 minutes in an oven preheated to 175C. Makes about 21 biscuits.
If sunlight slowly spoils spices, why are they sold in clear glass jars?
Clear glass appeals to more customers. But you can buy most spices in cardboard packets and transfer to an airtight container once opened. The main thing is to store them in a cool dark place, as sunlight slowly causes the essential oils to disintegrate and lose flavour. While some spices hold their flavour for years, most are best replaced every year - try writing the date of purchase on a sticker beneath the container.
