Ingredients:
1 tbsp olive oil
500g lean minced beef
4 medium courgettes, cut into 2cm rounds
1-2 tsp chilli paste

2 tsp mixed dried herbs
Freshly ground black pepper to taste
2 tbsp lemon juice
Method:

Heat oil in a large non-stick frying pan.
Add beef and stir-fry with a fork, breaking up any lumps. When coloured, add courgettes, chilli paste, herbs and black pepper.
Cover and continue cooking until courgettes are soft, stirring occasionally. Drizzle with lemon juice.
Great served on a potato mash or polenta accompanied by a relish or plum sauce.
