15 minute meal: Ravioli with tomatoes and bacon

Save Ravioli with tomatoes and bacon
4 rashers streaky bacon
3 tbsp balsamic dressing
250g cherry tomatoes, halved
2 shallots, diced
1/4 cup chicken stock
300g fresh pesto and ricotta ravioli or similar
2 cups rocket, chopped
Microwave the bacon until crisp, about three minutes. Chop.
Meanwhile, cook the ravioli
according to the packet instructions.
Heat the dressing in a large frying pan on medium-high. Add the tomatoes and shallots. Cook, stirring, until the shallots are tender.
