PARMESAN PORK SCHNITZELS
4 thick slices white bread, crusts removed
2 teaspoons mixed dried herbs
1/2 cup finely grated Parmesan cheese
4 pork schnitzels
1 egg, lightly beaten
2 tablespoons milk
2 tablespoons canola oil
Place the bread, herbs and Parmesan in a food processor and mix until the bread is finely crumbed.
Dip the schnitzels into the
combined egg and milk then into the crumbs, coating well. Chill to set.
Heat the oil in a non-stick frying pan. Pan-fry the schnitzels about 2 minutes each side or until cooked to your liking.
Great served with cooked pasta shells tossed with basil pesto, 4 quartered tomatoes and a chopped spring onion. - Serves 4
