A chance encounter in Darwin led to what is fast becoming a popular cakery in Kamo.

So popular, cakes made in Petra's Raw Cakes are being exported as far afield as Gisborne. And Aucklanders are gobbling them up at a great rate as well.

Petra's Kamo founder Angeleen Lewers first met Petra Kepic in Darwin where Petra was making non-baked cakes that were gluten, dairy, wheat and egg free. Ms Lewers is gluten and dairy intolerant and loved the product, enough to start selling Petra's cakes at markets.

When the registered nurse decided to return home to Whangarei in December she found very few "treats she could go for" and saw an opening in the market for a range of cakes similar to those she got to know in Darwin.

She contacted Petra and bought her recipes, went back to Darwin for two weeks' training with her mentor and came back to set up shop in Kamo.

"I always dreamed of setting up a business where I could balance work and life," she said. "But the reality is that, with the tax, legal, council, health department and big hours, it's a bit different.

"If anyone had told me at the start of the year what I would have gone through I doubt if I would have started - but I'm still really enjoying it," she said.

The main ingredients of the no-bake recipes include coconut cream, coconut milk, agave syrup (sweetener) cashew nuts and cocoa butter.

"It's mainly organic and mainly locally sourced."

The Kamo premises has a small coffee machine so patrons can have a coffee hit with their healthy cake but there are plans to have a kitchen off-site so the cafe aspect of the business can be developed.

"We want to have tables and chairs, to be more of a sit-down experience," she said.

Ms Lewers says the Kamo community, as well as people throughout Whangarei, had embraced Petra's products.

"There's been so much excitement from people working and living in the area and we now have a lot of regular customers.

"I think we have been good for Kamo."

Petra's supports local businesses, where possible, and has a strong eco-friendly policy.

Ms Lewers is confident of future growth and is looking at the possibility of franchising the operation.

She is also growing the business closer to home, branching out into wedding cakes.

While she acknowledges she could increase sales by shifting to Auckland, she is adamant that she will remain in Whangarei.

"This is my home."

Angeleen's mother Natalie is a co-owner of the business and the pair employ two staff.
