Paolo Pancotti from Molto Italian Kitchen prepared the Electrolux Pop-Up Italian Dinner, a F.A.W.C! event at Art Deco Masonic Hotel, Napier, attended by the management team and partners from The Tremain Group.

Italian chef Paolo Pancotti created an exquisite feast as part of the summer Food and Wine Classic at the pop up kitchen last night.

Mr Pancotti, from Molto Italian Kitchen, showcased his extensive repertoire with a three course meal for 26 foodie fanatics. He wowed guests with his culinary artistry and even offered a few tips and tricks of the trade.

"What I love about these events is I get to showcase what I do and who I am."

"I like to be creative and regardless of what people's tastes I hope to leave an impression. You can't please everyone so if 80 per cent of diners are happy, I'm happy," Mr Pancotti said.

The meal began with a carne e pesce seafood and beef crudo entree.

For the main course porchetta alla roman, slow roasted pork belly with seasoned vegetables and sage polenta gnocchi.

Finally guests were treated with a cheesecake semifreddo with golden raisin balsamico and macerated strawberries. All dishes were served with wine to match.

Tonight, Mr Pancotti will be serving up a risotto extravaganza at the pop up kitchen.

Risotto is Mr Pancotti's specialty and he will take guests through the history as well as offering insight into this versatile dish.

Hawke's Bay Tourism general manager Annie Dundas said the meal was heaven.

"He's an extremely talented chef and we are delighted to have him as part of the F.A.W.C! festival."
