There's something about spring that we all look forward to, from a winter quiet (in terms of growth) to the pink and white blossoms of the surrounding fruit trees and the beautiful colours of the flowers and shrubs which adds greatly to this season of new life and rebirth we call spring.

At Aunty's Garden, we've already planted our kamokamo, sweetcorn and the kumara tips have also popped through, adding to the excitement of an enjoyable harvest in the future.

Sharyn comes one day a week to help out and does a great job. She brought me some whitebait, which is a delicacy, and we rarely have this mouth-watering kai at our home. Add to that the vegetables from the garden and we have a delicious meal.

Whitebait Fritters (variations)

Whether you have lots of whitebait or a little, make your own judgments on quantities of ingredients.

Recipe 1

500g whitebait

Eggs to your liking

Beaten all in a bowl

Adding salt and pepper

Mix well and spoon to your sizing in a pan of hot butter

Just a few seconds on each side

sea salt 2-3 shakes and mix

1 tsp of finely chopped

dill

Recipe 4

500g whitebait

Beaten egg whites only

1/2 tsp finely chopped

parsley

Salt and pepper

A squeeze of lemon juice

1/2 cup of cream

Serve with kumara chips and beetroot relish.
