Winter school holidays are a great time to fill the house with the warm smell of baking.
And what a cool way for the kids to make a mess of the kitchen!
Mrs Quinn's Easy Brownies
Prep Time: 25 minutes
Cook Time: 22 minutes
Total Time: 47 minutes
Ingredients:
3/4 cups melted butter
1 1/2 cups sugar
1
1/2 teaspoon vanilla
3 eggs
1/2 cup cocoa powder
3/4 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
1 cup chopped, toasted nuts
1 cup semi-sweet chocolate chips
Preparation:
Heat oven to 350 degrees, grease a 13x9" pan.
Beat butter, eggs, sugar, vanilla in a large bowl. Mix in cocoa, flour, baking powder and salt.
Stir to combine. Stir in nuts and chips.
Pour into pan.
Bake for 20-22 minutes.
Homemade pancakes for breakfast:
Prep Time: 15 minutes
Cook Time: 05 minutes
Ingredients:
1 3/4 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 eggs
1 3/4 cups milk
1/2 cup oil
Preparation:
In a large bowl, combine dry ingredients with wire whisk.
In a small bowl, with an electric mixer, combine eggs, milk and oil. Slowly add wet ingredients to dry ingredients. Mix by hand just until large lumps are gone.
Heat griddle or frying pan. Lightly grease pan. Using a cup measuring cup to form each pancake in pan. Bake until bubbles appear and edges are brown. Flip pancakes and cook for a minute or so longer. Makes about 16 pancakes.
