Add fried egg for an authentic touch.

Asian inspired quick and healthy dinner, add your favourite vegetables in for extra colour and nutrition.

Ingredients:

1 tbsp each: orange juice, hoisin sauce, cornflour

400g skinned and boned chicken, thinly sliced

1-2 tbsp canola oil

4 cups cooked long grain rice

1 cup frozen peas

1/2 cup toasted cashews

1 spring onion, sliced

Method:

Mix juice, hoisin sauce and cornflour. Add chicken and stir until coated. Heat 1 tbsp of oil in a large, non-stick pan. Stir-fry chicken in batches, about 2-3 minutes. Set aside. Wipe pan clean. Heat 2 tsp of oil and add rice. Stir-fry for 2 minutes, until grains are separated. Add peas, heat through. Return chicken to pan with cashews and spring onion. Heat through. - Serves 4.
