Serves 4

1 cup watercress leaves
3 avocados
200g white crab meat
16 snowpeas
1/2 cup coriander leaves

Dressing
2 Tbs mirin
Juice of 2 lemons and finely grated zest of one
50g palm sugar, grated
100ml light soy sauce
50ml Shaoxing wine

1 Slice the snowpeas finely and scatter with the coriander leaves and watercress over your plate.

2 Peel the avocados, remove the stones and slice each into 6. Arrange on plates with the crab meat spooned over.

3 Make the dressing by whisking all the ingredients together. Drizzle over the salad and serve.
