Recipe: Corn salad with brown rice, sesame and coriander

Serves 4-6

1 cup corn kernels, cooked, drained and cooled
2 cups brown rice, cooked
1 red or yellow capsicum, diced
1 spring onion, sliced
1 small red onion, finely sliced - optional
2 tsp fresh ginger, finely chopped
1/2 cup fresh coriander, chopped
1 cup canned tuna, drained
Juice and finely grated zest of one lemon,
2 Tbs sesame seeds, lightly toasted
2 Tbs soy sauce
3 tsp sesame oil
2 tsp peanut oil
Black pepper

1. Combine all the ingredients in a large bowl and taste for seasoning.

2. Add more lemon and soy if desired then cover and refrigerate for at least an hour to let the flavours develop.
