Each year, as March turns to April, I begin to contemplate the change in seasons from autumn to early winter. As the afternoons begin to cool, the last of the summer fruit can be simmered on the stove to make lovely jams.

Mother's Day is tantamount to spending an afternoon sharing a scone, whipped cream and delicious home-made jam, paired with a pot of tea.

Scones don't take but a moment to whip up, however, one does need to use the lightest of touch, ideally with fingertips, to blend the flour and butter which produces soft and fluffy scones. Make them with your mum, pop on a CD, relax and take the time to appreciate each other.

Spending time together with your mother, step-mother or mother-in-law while sharing recipes and enjoying different food from their gardens and/or cooking history, is a special time to be appreciated.

Chef's tip

Now is a good time to write down recipes or even just the key flavours used in dishes made by your mother that you enjoy. The time will come when you will ask what made that dish taste so good and the ingredients will be forgotten. Start a Mother's Day recipe book this week, if you haven't done so already.
