Salmon tacos
• 8-10 taco shells
• 300-400g wood-roasted salmon, broken into chunks
• 2 cups Mexican-style salsa
• 1-2 tsp diced chilli or to taste
• 2 cups each: sliced crisp lettuce, grated tasty cheese
• 2 each: shallots, tomatoes, diced
• 1 large avocado, stoned, peeled and sliced
1. Heat taco shells briefly in microwave or oven.
2. Combine salmon with taco sauce and chillies and heat through.
3. Fill taco shells with lettuce then top with salmon, cheese, onion, tomatoes and avocado.
