For this recipe you need 200g of cheese in total - 100g of two different types. You can choose between cream cheese, mascarpone, ricotta, and/or thick Greek style yoghurt.
1 Tbs icing sugar
1 vanilla bean
1 Tbs cream
Cheesecloth or muslin
1 1/2 cups of mixed berries - blueberries, strawberries, blackberries
Cognac [optional]
1 If using cream cheese you will need to soften it first. Mix the two cheeses of your choice together with the sifted icing sugar.
2 Scrape the seeds from the vanilla bean and stir through. Add the cream.
3 Spoon the mixture into two pieces of muslin. Bring the sides together, twist to form a ball and tie each bundle on to the handle of a wooden spoon. Suspend over a bowl or jug to drain overnight.
4 To serve, unwrap and place in the centre of the serving bowls. Surround with fresh berries, splashed with cognac if desired.
