Beef burgers on spicy couscous

Serves 4

• 400g lean minced beef
• 1 egg, lightly beaten
• 1 tbsp each: mixed dried herbs, olive oil
• 1 onion, diced
• 2 tsp curry powder
• 2 cups each: beef stock, couscous
• 1/2 cup sultanas
• 1/2 tsp ground mixed spice

1. Combine beef, egg and herbs and form into 4 patties.

2. Heat 1 teaspoon of the oil and pan-fry the burgers about 4 minutes each side. Meanwhile, saute onion in remaining oil. Add curry powder and stir for 30 seconds. Add stock and bring to the boil.

3. Remove from heat. Stir in couscous, sultanas and mixed spice.

4. Serve burgers on the couscous. Great topped with a little plain yoghurt and chopped parsley.
