The concept of Good Neighbour is one Jason wants to roll out across other towns and regions, and says this is the prototype for a potentially strong Waikato brand.
He says the new site will be more food based, and they are currently putting a menu together, with signature dishes and gourmet pizzas.
Research into overseas trends has been done for the menu, which will bring dishes the market is yet to see.
Jason says the food will always be tied back to a beer match, and Good Neighbour will have its own range of specially brewed beers for the area, but the flavours are yet to be decided.
"We're really excited about coming to this area. The reason that our brand has been so successful is because the local environment has really picked it up and run with it as their own."
As the Good George brewery location is a former 1924 St George Anglican Church, Jason says it was interesting to achieve some of the design details, so people could look at the building and know it was connected to Good George.
"I think we've done it pretty successfully, based around the design [and] the pitch of the roof. It's quite industrial; it's about our relationship with beer basically."
The building will feature a mezzanine floor and a 250sqm garden around the outside, with a big emphasis on catering to functions and groups.
Jason says he wants Good George to be a strong local brand, and was inspired when he was unhappy with the lack of local ties Waikato Draft had to the Waikato.
With around 120 taps around the country, Jason jokes they keep running out of beer, and will need to increase their capacity to take part in more overseas brewing.
"We brewed 42,000 litres in England at the international craft beer festival over there and we won people's choice award."
"We've done some international stuff and we want to do more this year, once we get our capacity up, because we're running out of beer all the time!"
