Preheat the oven to 180C. In a large bowl, combine the mince, egg, bread and sauce.
Divide the mixture evenly among the muffin cups. Brush the tops witha little more sauce and bake until cooked through, about 20 to 25 minutes. Remove from oven and rest.
Optional: For the "icing", spoon warm, leftover mashed potato onto the top of each meatloaf in a swirling motion to make your "cupcakes".
