CHICKEN AND BEAN NACHOS

Serves five and ready in 40 mins

2 tbsp olive oil

1 onion, finely chopped

450g chicken mince

400g can chopped tomatoes

400g mild chilli beans

1 tsp brown sugar

Salt

300g packet corn chips

1 cup grated tasty cheese

Guacamole, to serve

Sour cream, to serve



Heat oil in a large deep-sided frying pan or saucepan and gently cook onion for five to eight minutes until softened.

Increase heat and add chicken.

Cook until chicken is lightly coloured.

Add tomatoes, beans, brown sugar and season to taste with salt.

Gently simmer for 15-20 minutes until mixture is thick and saucy.

Place half the corn chips into a shallow baking dish and spoon over the bean mixture. Sprinkle with cheese and grill until melted and bubbling.

Serve with extra corn chips on the side, and guacamole and sour cream to spoon over.

Nachos are quick and easy to make. They can be a filling after-school snack or a shared dish in front of the TV. Adjust quantities and ingredients to make with whatever you have on hand.
