Heat oil in a large deep-sided frying pan or saucepan and gently cook onion for five to eight minutes until softened.
Increase heat and add chicken.
Cook until chicken is lightly coloured.
Add tomatoes, beans, brown sugar and season to taste with salt.
Gently simmer for 15-20 minutes until mixture is thick and saucy.
Place half the corn chips into a shallow baking dish and spoon over the bean mixture. Sprinkle with cheese and grill until melted and bubbling.
Serve with extra corn chips on the side, and guacamole and sour cream to spoon over.
