2 tablespoons olive oil

50g butter

4 cloves garlic, thinly sliced

2 long red chillies, seeded and diced

1kg peeled green prawns

freshly ground salt and pepper to taste

grated rind 1 lemon

2 tablespoons each: fresh lemon juice, finely chopped coriander

Heat the oil and butter in a large frying pan on medium. Add the garlic and chilli and cook, stirring, for 30 seconds. Add the prawns and season. Cook, stirring, until the prawns are pink and just cooked through. Add the lemon rind, juice and coriander. Toss to combine. Serve with a rocket salad and sliced French bread.-Serves 4
