15 Minute Meal: Chicken and Tomato Curry

2-3 tbsp canola oil

2 onions, diced

2 cloves garlic, crushed

2 tsp each: diced chilli, curry powder

1 tbsp grated root ginger

3 large tomatoes,

chopped

500g skinned, boned chicken breasts, in 2.5cm cubes

1/2 cup plain yoghurt

Heat the oil in a large heavy saucepan. Saute the onions until golden. Add the garlic, chilli, curry powder, ginger and tomatoes. Cover and simmer for 2 minutes.

Add the chicken to the pan. Cover and simmer for 10 minutes, until cooked. Stir in the yoghurt. Serve with poppadums and rice. - Serves 4.
