Baked Salmon with Pesto Crust

4 salmon steaks

190g jar basil pesto

100g pecorino cheese, finely grated

1 lemon

Sear salmon steaks on each side for two minutes, skin side down first. Meanwhile combine half a jar of pesto and all the cheese. Spread this mixture over salmon steaks and squeeze fresh lemon juice over the top. Bake in a moderate oven for 15 minutes.

Optional: Substitute pecorino for parmesan, use extra pesto if required.
