My American crepe recipe calls for seltzer water - what is this?

It's another name for carbonated water, aka soda water, sparkling water or fizzy water. Using seltzer water instead of milk in pancakes, batters (especially tempura batter) and even scrambled eggs gives lighter results. For maximum effect, chill the carbonated water and don't open the bottle until just before using. Once dry and liquid ingredients are combined, cook the mixture as soon as possible because the bubbles that add lightness dissipate after 15 minutes or so.

Is there enough flavour and food value in the thick white stems of silver beet to bother with cooking them?

"Waste not, want not" was Gran's old adage. The stems are a useful source of fibre and vitamins; try finely slicing at least some of the stem and microwave along with the shredded green leaves, so both cook at the same time. Or saute sliced stems in butter, include them in stir-fry mixtures or cook in white sauce - add cheese at the last minute if you like.
