Unless you specifically want your property to look like Colditz, think about plants to soften the edges, or even to replace pavers at various intervals, particularly if you have a large expanse.
Mondo is often the plant of choice to combine with paving, especially if you want something neat and easily
controlled, but there are other grasses, like carex comans, that will give a softer look.
Scleranthus is a gorgeous mossy plant that'll creep over your pavers in interesting clumps, but it requires a bit of looking after to make sure you don't get dead areas.
The little native ground cover Pimelea prostrata is also very pretty with its delicate grey-green foliage, and it spreads in a fairly orderly fashion.
If you want a border, as opposed to an edging of plants, consider star jasmine. Clipped to a shrub-like habit, it provides a thick, lush mass of foliage and there's the added bonus of scented flowers in season. The Australian native miniature frangipani, known as Golden Nugget, is also a good clumping plant to create a fairly solid border, and again, it produces a fragrant flower.
