2 teaspoons canola oil
1 large red onion, cut into 8 wedges
150g green beans, cut into 5cm lengths
1 large red pepper, thinly sliced
cup water
400g beef schnitzel, thinly sliced
2 cloves garlic, crushed
cup each hoisin sauce, toasted cashew nuts
1 tsp sesame oil
Heat one teaspoon of the oilin a non-stick wok. Add the vegetables and one tablespoon water. Stir-fry until crisp-tender. Place to one side.
Heat the remaining oil in the wok. Add beef and garlic and stir-fry for one minute over high heat. Add hoisin, cashews, remaining water, sesame oil and vegetables and stir-fry about one minute. Great with rice. Serves 4.
