CHICKEN BLT SALAD
2 tsp olive oil
500g skinned and boned chicken breasts, halved lengthwise
Freshly ground black pepper to taste
4 rindless rashers middle bacon, quartered
1 large cos lettuce, leaves torn
4 vine tomatoes, quartered
1 small avocado, halved, stoned, peeled and sliced
1/2 cup low-fat Caesar dressing
Heat the oil in a non-stick frying pan.
