15 minute meal: Penne with chorizo, mushrooms and rocket

PENNE WITH CHORIZO, MUSHROOMS & ROCKET
300g dried penne
2-3 chorizo sausages
1 tbsp olive oil
250g button mushrooms, thinly sliced
1 clove garlic, crushed
400g can Italian-style diced tomatoes
120g rocket leaves, chopped
Cook the pasta in the large saucepan of boiling salted water until just tender. Drain.
Meanwhile, thinly slice the sausages on the diagonal. Heat the oil in a large non-stick frying pan. Add the sausages and stir-fry until lightly brown, about 3-4 minutes.Add the mushrooms and garlic.
Stir-fry until the mushrooms are cooked. Add the tomatoes and bring to the boil.
Combine the pasta, the sausage mixture and the rocket. Toss to combine. Great served topped with grated Parmesan cheese. Serves four.
