PENNE WITH CHORIZO, MUSHROOMS & ROCKET
300g dried penne
2-3 chorizo sausages
1 tbsp olive oil
250g button mushrooms, thinly sliced
1 clove garlic, crushed
400g can Italian-style diced tomatoes
120g rocket leaves, chopped
Cook the pasta in the large saucepan of boiling salted water until just tender. Drain.
Meanwhile, thinly slice the sausages on the diagonal. Heat
