15 minute meal: Lemon chicken breasts

LEMON CHICKEN BREASTS
2 large skinned and boned chicken breasts
1 tbsp flour
salt and pepper to taste
1 tbsp canola oil
1/2 cup chicken stock
2 cloves garlic, crushed
2 tbsp lemon juice
Flatten each chicken breast slightly. Combine the flour, salt and pepper and dust over the chicken.
Heat the oil in a non-stick frying pan.
Fry the chicken breasts about 5 minutes each side, until cooked. Remove chicken from the pan to a warm serving dish. Cover.
Add the stock, garlic, lemon juice and butter to pan. Simmer for 1-2 minutes. Pour over chicken and serve. Great accompanied by halved tomatoes topped with basil leaves and warmed through in the microwave, plus a green salad and bread rolls. Serves 4
